Nasi Kuning (Indonesian Yellow Rice)
Ingredients
- 1 Tablespoon Olive Oil
- 2 Tablespoons Shallots -- finely chopped
- 2 Teaspoons Ginger Root -- finely chopped
- 1 Teaspoon Lemon Grass
- 1 Medium Jalapeno -- finely chopped
- 1 Teaspoon Coriander
- 1/2 Teaspoon Turmeric
- 1/2 Teaspoon Salt
- 1/3 Cup Raisins
- 1 Cup Long-Grain Rice
- 2 Cups Water
- Saute shallots, ginger, lemon grass and jalapeno for 3 minutes.
- Add seasoning and saute for 1 minute. stir in raisins, rice and water and bring to simmer over medium heat.
- Cover and cook 15 to 20 minutes or until rice is tender.
- Remove from heat, fluff and serve.
