Soto Madure (Spicy Beef Stew)

Ingredients

  • 3 Pounds Beef -- Cubed
  • 10 Cups Beef Broth
  • 1 Teaspoon Salt
  • 7 Large Shallot -- Chopped
  • 1 Lemon Lemon Juice
  • 1 Tablespoon Soy Sauce
  • Pepper -- To Taste
  • 3 Medium Macadamia Nuts
  • 4 Ounces Shrimp -- Chopped
  • 1 Teaspoon Ginger
  • 1/2 Teaspoon Turmeric
  • 1 Large Jalapeno -- Chopped
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Peanut Oil
  • 1 Bunch Scallion -- Chopped
  • Rice -- Cooked
Directions
  1. Boil beef in water and salt for 1 hour.
  2. Place remaining ingredients except the scallions and rice in the blender.
  3. Process to a paste.
  4. Transfer to a frying pan and saute for 6 minutes.
  5. Combine shallot mixture with the beef.
  6. Simmer for 1 hour.
  7. Serve with a scoop of rice in the bottom of a soup bowl, ladle in some of the beef and sprinkle with scallions.
