Empal

Ingredients

  • 3 Large Shallots -- sliced
  • 1 Clove Garlic -- sliced
  • 1/2 Teaspoon Turmeric
  • 1/2 Teaspoon Salt
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Ground Coriander
  • 2 Cups Water
  • 1 Pound Boneless Beef -- cubed
  • 1 Teaspoon Lemon Grass
  • 1 Slice Lime
  • 1/4 Cup Olive Oil
Directions
  1. In food processor, blend shallots, garlic, turmeric, salt, sugar, coriander and 2 tablespoons of water to form a smooth paste.
  2. In bowl add beef and then paste and allow to marinate for 1 hour.
  3. Cook beef with lemongrass and lime slice in remaining water for 1 hour or until beef is tender and liquid has almost evaporated.
  4. Pound beef to flatten slightly if desired.
  5. Heat oil in skillet and brown beef over moderate heat for 3 minutes.
  6. Drain on paper towels and serve over rice.
